Recipe: Hassle-Free Hummus + 3 Hummus-Based Dressings (Oil Free)

We love hummus, and we make this basic recipe often! We make it thick so we can use it as a spread on baked potatoes or toast. If you prefer a thinner consistency, simply add more aquafaba (liquid from canned chickpeas – or cooking water if using dried chickpeas). This hummus is very versatile; we like to eat it as is or add other ingredients to make dressings/dips for salads, veggies, and whole grains. See 3 oil-free hummus-based dressing ideas below!

Hassle-Free Hummus

Ingredients

  • 1 can chickpeas drained – reserve liquid from can (or 2 cups cooked chickpeas-reserve cooking liquid)
  • 1/2-3/4 cup aquafaba (liquid from chickpea can or cooking water)
  • 3 cloves garlic
  • 1 tbsp hemp seeds (or sunflower seeds *see note)
  • 2 tbsp lemon juice

Optional

  • 1 tsp smoked paprika
  • 1 tsp parsley
  • 1/4 tsp cumin

Directions

  1. Add all ingredients to a high-speed blender; blend until smooth.
  2. If it’s too thick, add more aquafaba or water 1 tbsp at at time to achieve desired consistency. Taste test and add seasoning to taste.

*Note: Traditional hummus is made with sesame paste (tahini). We love tahini, but our son’s school doesn’t allow sesame seeds (or tahini) because of severe allergies. So, we use hemp seeds or sunflower seeds as a substitute.
