These yummy vegan peanut butter chocolate chip cookies are so easy to make and so delicious! They’re made using only 5 (or 6) ingredients, they’re sweet, and oh so peanut buttery!

Vegan Peanut Butter Chocolate Chip Cookies

Ingredients
- 1/2 cup oat flour *see note
- 1/2 cup vital wheat gluten *see note
- 1 cup natural peanut butter
- 1/2 cup syrup (maple, date, or table syrup)
- 1 tsp vanilla
- 1/4 cup chocolate chips
Directions
- Preheat oven to 350 F and line a baking sheet with a silicone baking mat or parchment paper.
- Mix the dry ingredients together in a large bowl (oat flour and vital wheat gluten).
- Add the wet ingredients (peanut butter, syrup, and vanilla extract), and mix.
- Add chocolate chips and gently incorporate into batter.
- Scoop cookies onto baking sheet. *see notes
- Flatten slightly with a fork.
- Bake for 15 minutes.
- Enjoy!
Notes
- Makes 12 medium sized cookies (using a medium sized ice cream scoop).
- If you don’t have (or prefer not to use) vital wheat gluten, you can use 1 cup of oat flour.
- If it gets sticky when scooping and flattening cookies, dip your scoop or fork into a cup of water (or run under the faucet for a moment).
