Recipe: Pumpkin Spice Pancakes or Waffles (Plant-Based, Oil Free Vegan)

Weekend family breakfasts are a highlight in our house. So much so, that we have dubbed Saturdays, “Special Breakfast Saturdays.” We have fun making and eating breakfast together; and we keep it simple and delicious by regularly making pancakes or waffles. Lately we’ve been loving these pumpkin spice flavoured ones. Using the same wholesome ingredients like pumpkin, banana, and oats, you can make either pancakes or waffles with this easy recipe. Pumpkin Spice Pancakes or Waffles (Plant-Based, Oil Free Vegan)

Pancakes or Waffles
Ingredients

  • 1 cup pumpkin puree
  • 1 banana
  • 3 cups oats
  • 1 cup almond milk (or other plant milk)
  • 1 cup water
  • 3 tbsp ground flax seeds
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice or apple pie spice
  • 1 tsp vanilla powder (or vanilla extract)
  • dash cinnamon

Pancakes
Directions

  1. Warm a non-stick pan over medium heat OR preheat griddle (Griddler – 375 on the griddle setting).
  2. Add all ingredients to food processor.
  3. Process until smooth.
  4. Pour scoops of batter onto pan or griddle.
  5. Wait until bubbles start to form and pop on the surface of the pancake, then flip and cook the other side of the pancake until golden brown (8-10 minutes per side on the Griddler).

Waffles
Directions

  1. Preheat waffle iron or griddler with waffle plates (Griddler – 400 on the griddle setting).
  2. Add all ingredients to food processor.
  3. Process until smooth.
  4. Pour scoops of batter onto waffle iron or waffle plates in the griddler.
  5. Close lid and allow to cook for 8-12 minutes (or use timing instructions included with your specific appliance).
  6. Gently try to lift lid. If it’s sticking, close lid and wait another minute or two.
