Meg’s Mishmosh Meal: Comfort Fries – Fries and Gravy with Veggies and Chickpeas

Potato. Veggies. Chickpeas. Gravy.

I love fries and gravy! I love to punch it up with extra veggies and legumes. Use leftover fries and gravy or whip them up in about 10 minutes. Either way, this comforting meal comes together in a snap. I often use frozen veggies and canned chickpeas as well to speed up the prep. Substitute any veggies or legumes you prefer!

Ingredients

Fries

  • If you have leftover fries, skip to directions.
  • Wash potatoes and chop into fries.
  • Oven: Preheat to 425 F. Bake 20 minutes. Flip and bake another 10-20 minutes. OR
  • Microwave: Put fries on microwave-safe plate. Cook 5 minutes. Flip and cook another 2-7 minutes (or until cooked through)

Directions

  1. If all ingredients are leftovers, warm them up in the microwave – about 1 minute per item.
  2. Add fries to a plate, top with veggies, chickpeas, and gravy.
  3. Enjoy!

Notes: I didn’t include a specific amount of potatoes so you can decide how much potato you would like to eat. Mishmosh Meals are very flexible and you can adapt all of the amounts to suit your needs.

Vegan Gravy

Ingredients
Dry

  • 3 tbsp flour (whole wheat or oat)
  • 3 tbsp nutritional yeast
  • 1 tsp poultry seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp black pepper

Wet

  • 1.5 cups water
  • 1 tbsp miso (or substitute tamari or coconut aminos)

Directions

  1. Measure dry ingredients and set aside in a small bowl.
  2. Add water and miso to saucepan.
  3. Bring to boil, whisk to combine.
  4. Add dry ingredients to saucepan, whisking continuously.
  5. Reduce heat, simmer until thickened (3 minutes or so). Continue whisking to avoid clumping.
  6. Serve and enjoy!

Note: The gravy will thicken when removed from the heat. If the gravy becomes too thick, simply add more water and whisk again.
