



BBQ Tofu Kebabs (Vegan, Oil Free)

Ingredients
- 1 block extra firm tofu, drained *see note
- 1/2 red pepper
- 1/2 green pepper
- 6-8 white button mushrooms

Directions – Assembling Skewers
- Wrap tofu in towel or paper towel and press gently
- Chop tofu, peppers, and mushrooms into large chunks
- Thread alternating pieces of pepper, tofu, and mushrooms onto the skewers
- Brush BBQ sauce onto kebabs in a thick layer (about 1/2 of the sauce)
Cooking Instructions – Charcoal Grill
- Prepare and light grill
- Place kebabs on tin foil and cook on top rack for 10 minutes
- Carefully move kebabs on foil to main grill and cook another few minutes
- Flip and cook another few minutes
- Carefully remove kebabs from foil and cook another 1-3 minutes per side
Cooking Instructions – Oven
- Preheat oven to 375 F, and line a baking sheet with a silicone baking mat or parchment paper
- Bake for 20 minutes
- Flip and bake another 5-10 minutes
Notes
- Tofu can also be frozen in the package, defrosted in the fridge overnight, drained, and then chopped into large chunks. Freezing the tofu makes for a more firm, dense, and chewy texture.
- This recipe makes about 5 small skewers.
