Meg’s Mishmosh Meal: Vegan Pita Pizza

Whole Wheat Pita Bread. Pizza Sauce. Veggies.

We love to make pita pizzas for a quick, delicious meal! We use our easy pizza sauce, leftover marinara sauce, or pizza hummus for the sauce. You could also use a commercial variety of your choice to simplify even further. Enjoy topped with your favourite chopped veggies, and our gooey easy cheese. Another option is to top with buffalo tempeh or spicy tofu to jazz it up. Serve alongside a salad or extra veggies to boost the nutrition.

Easy Pizza Sauce

Ingredients

  • 1 can tomato paste
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp Italian seasoning (or 1/2 tsp basil, 1/2 tsp oregano)
  • dash black pepper or crushed red pepper flakes
  • 1/4 cup water

Directions

  1. Mix all ingredients together in a bowl until smooth.
  2. Taste test and add more seasoning to taste if desired. Add more water to thin slightly as needed.

Note:
We sometimes add nutritional yeast to the sauce to add a cheesy note.

Gooey Vegan Cheese Sauce-Easy Cheese (Nut free)

Ingredients

  • 3/4 cup plant milk (unsweetened)
  • 3 tbsp nutritional yeast
  • 2 tbsp corn starch or tapioca starch
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt (optional-see note)

Directions

  1. Combine all ingredients in a saucepan. Whisk continuously over high heat until thick (about 2-5 minutes).
  2. If it becomes too thick, add a little more plant milk and whisk again.

Notes

  • Add salt if you enjoy it, and omit if you’d rather not use it.

Vegan Pita Pizza

Makes 2-3 pita pizzas

Ingredients

Directions

  1. Preheat oven to 375 F
  2. Spoon the desired amount of sauce onto the pita leaving a bit of space at the edges for “crust”.
  3. Add chopped veggies and easy cheese.
  4. Bake for 10-15 minutes or until desired crispness.
  5. Enjoy!
