Spinach mashed potatoes are a healthful comfort food that are a perfect dish for Thanksgiving or Christmas dinner (and other holiday celebrations). Prepare on the stovetop or in your Instant Pot! Enjoy this spinach mash as is or use as the top layer in your shepherd’s pie.


Spinach Mashed Potatoes (Stovetop or Instant Pot)
Ingredients
- 10-12 potatoes (about 6 cups chopped)*see note
- 2.5 cups packed spinach (about 2 cups chopped) *see note
- 1 tsp garlic powder
- 1 tsp paprika
- dash pepper
- splash of water or plant milk
Directions – Stovetop
- Peel potatoes if desired. (We tend to leave the skins on.)
- Chop into quarters.
- Place potatoes in pot, cover with water.
- Bring to a boil. Boil on high for about 15 minutes until soft.
- While potatoes are cooking, finely chop spinach.
- Drain potatoes.
- Mash potatoes with a bit of water or plant milk.
- Stir in chopped spinach and spices
Directions – Instant Pot (we have a 6 quart Instant Pot)
- Peel potatoes if desired. (We tend to leave the skins on.)
- Chop into quarters.
- Put 1 cup of water in Instant Pot. Place potatoes into steamer basket (or trivet) in the Instant Pot.
- Close lid and set pressure valve to sealing.
- Set to high pressure, manual button for 12 minutes.
- While potatoes are cooking, finely chop spinach.
- Allow pressure to release for 15 minutes.
- Drain potatoes.
- Mash potatoes with a bit of water or plant milk.
- Stir in chopped spinach and spices.
Notes
Potatoes – The number of potatoes needed will vary depending on the type and size of potato you’re using. We typically use yellow potatoes for this recipe.
Spinach – We use about 2.5 cups of packed spinach (or baby spinach), which equals about 2 cups finely chopped. Feel free to reduce the amount of spinach at first to test it out, or increase the amount of spinach to suit your taste preferences.
