What I Eat in a Day When I’m Sick – Vegan Comfort Food

I’ve been feeling sick for the past few days, and have been resting and recovering. I thought it would be helpful to share what I eat in a day when I’m sick.

Pre-Breakfast – Water (hot and cold) and Apple Sauce

Breakfast – Berry Green Smoothie, Pancakes, Berries, Water, Coffee

I usually like to start my day with green veggies, but when I’m sick, I’m not so keen to start my day with broccoli or brussels sprouts. Smoothies are a great way to get my greens in when I’m sick. Smoothies taste delicious and are soothing on my throat too. My husband, Chris, also made us pancakes this morning. He made the pancakes from the PlantPure Nation Cookbook. We topped them with maple syrup and mixed berries. Yum!

Lunch – Leftovers! Spicy Tofu, Baked Fries, and Sweet Potato

I love leftovers any day, but they are a particular lifesaver when I’m sick. I really wanted mashed potatoes – the ultimate comfort food for me, but I didn’t have the wherewithal to put them together today. So, I opted for leftover tofu, baked fries, and sweet potato instead.

Here is how I prepare my baked potatoes:

Baked Fries/baked sweet potatoes: Preheat oven to 425 F. Cover baking sheet with a silicone baking mat or parchment paper. Chop potatoes into halves, wedges, or fries and place on baking sheet. Bake 20 minutes. Flip and bake another 15-20 minutes.

Snack – Tea, Apple, Apple Sauce

Dinner – Meg’s Mishmosh Meal: Easiest Apple Cinnamon Oatmeal

Oats are one of my favourite foods. I wanted something sweet and easy to eat, so I decided to have this warm, comforting apple cinnamon oatmeal for dinner. 

Dessert – Cinnamon Spice Herbal Tea

I enjoyed cinnamon spice herbal tea at the end of the night. 

I drank a LOT of water today and tried to get plenty of rest – as much rest as possible while hanging out with my energetic 5 year old.
