What I Eat in a Day for Weight Loss (Whole Food Plant-Based, Vegan)

A full day of eating for healthy plant-based weight loss and weight loss maintenance. Since switching to a plant-based diet, I have regained my health and lost 80 pounds. I keep my food simple, healthful, and delicious!

I thought it would be fun to write up a batch cooking post, and then follow it up with a what I eat in a day post using the ingredients and recipe I made. I used my Instant Pot to prep some whole grains and legumes, and made a yummy sweet potato chili. Check out the batch cooking post if you haven’t read it yet and would like details about how I batch cook and what I prepared for the week.

Breakfast – Water, Coffee, Morning Bowl, Carrots

I like to start my day with water, and Chris also made me a nice cup of coffee with almond milk this morning. Lately, I’ve really been enjoying this morning bowl with oat groats, riced cauliflower, green lentils, fruit, and ground chia or flax seeds. This morning I chose to have blueberries and mango with a splash of almond milk. It might sound odd to have lentils and cauliflower in my morning oats, but I find that they take on the flavour of whatever fruit I choose to add to it. If you’re trying this out for yourself, you may want to add peanut butter, powdered peanut butter, jam, applesauce, or dried fruit as well. There were some carrot sticks leftover from Ryerden’s lunchbox this morning, so I enjoyed those with my breakfast as well!

Lunch – Sweet Potato Chili & Greens

I decided to enjoy my leftover sweet potato chili on a bed of spinach and kale. I also had some of our nut-free nacho cheese in the fridge, so I topped my bowl with that as well. We also like to use the chili and nacho cheese sauce recipes for burritos, tacos, and nachos.

Dinner – Zucchini Noodles and Oat Groats with Veggie Lentil Marinara

We decided to whip up some marinara for dinner tonight. We used our easy marinara recipe, and added mushrooms as well as cooked lentils to the sauce. I warmed some leftover oat groats, and spiralized zucchini with my spiralizer. I enjoyed the zucchini noodles and oat groats mixed together topped with our marinara sauce. The boys had whole wheat pasta for their dinner. I like to have pasta from time to time as well, but I find that it doesn’t fill me up as much, so I often opt for a whole grain like rice or quinoa instead.

Supplements

I  take vitamin B12 and vitamin D3 supplements.

Dessert – Mixed Berries and Ginger Peach Tea

I often enjoy a snack in the evening. I tend to eat some fruit or sweet potato along with a cup of tea. Tonight, I chose to have some defrosted mixed berries with a cup of Stash Ginger Peach tea.

I drank lots of water in between meals (and with my meals) today.
