What We Eat and What We Do in a Day on the Weekend – Healthy Vegan Family

What our healthy vegan family eats in a day on the weekend! We had a lot of fun filming what we ate and what activities we were doing throughout the day!

Since switching to a plant-based diet, I have regained my health and lost 80 pounds. My husband has also lost some weight (check out our post here for details). Our son has been plant-based practically since birth and we like to keep our food simple, healthful, and delicious!

Pre-Breakfast – Water, Fruit

I like to start my day with water. Ryerden likes to eat as soon as he wakes up in the morning, so he often has a few pieces of fruit and sometimes some dried fruit, nuts, or dry cereal as well. This morning he had some apple sauce topped with hemp seeds, Cheerios, and cinnamon; an apple; and some mango!

Breakfast – Brussels Sprouts, Banana Oat Pancakes, Berries, Chocolate Date Sauce

I like to start my day with green veggies. I find that it sets the tone for the day and ensures that I get some greenery into my day! I microwaved my frozen Brussels sprouts and topped them with Franks’s Red Hot Sauce and Bob’s Red Mill Nutritional Yeast.

We made our Banana Oat Pancakes this morning! We love to make this simple recipe using our Kitchenaid Food Processor and cooking them up on our Cuisinart Griddler. We all drank water; and Chris and I enjoyed coffees with soy milk as well.

After breakfast, I filmed a TikTok, and we went out for a walk/scooter/skateboarding adventure together!

Lunch – Mac and Easy Cheese with Broccoli

We had some leftover whole wheat macaroni in the fridge, so we decided to whip up our Easy Cheese Sauce and some broccoli for a simple and yummy lunch meal. Ry was still hungry after the mac and cheese, so he had some more macaroni with broccoli and balsamic vinegar.

Snack – Coffee, Dates, and Water

After lunch, we decided to play a couple of board games and have an afternoon snack. We enjoyed a few dates each, and Chris and I had cups of coffee with soy milk.

After board game time, Chris and Ryerden did some fingerboarding (skateboarding with mini skateboards) with their homemade ramps while I did some work.

Dinner – Refried Beans with Rice (Salad and Burritos)

Our super simple refried beans have been one of our favourite staple meals lately! We had some leftover rice, chopped Brussels sprouts, shredded carrot, and guacamole on hand to add to our meals as well. I decided to make a big salad for myself; Chris and Ryerden enjoyed burritos! We were missing our nut-free nacho cheese, but otherwise, it was a delicious and filling meal!

Dessert – Blueberry Cherry Nice Cream, Black Cherry Berry Tea

I decided to make some nice cream in our Vitamix Blender. Ryerden and I both had blueberry cherry nice cream for dessert. We love to make nice cream, and we often mix up the fruit to change the flavour. I have even tossed spinach in our nice cream from time to time to jazz up the colour and boost the nutrition. I also enjoyed a cup of black cherry berry tea from the Celestial Seasonings Fruit Sampler Pack.

We store our nice cream in the Tovolo Reusuable Ice Cream Containers. Chris and I watched some ‘Parks and Recreation’ on Netflix.

Chris usually stays up later at night and enjoys some kind of late night snack like cereal, toast, or fruit. Tonight he had some Pretzel Crisps.

We all drank lots of water in between and with our meals today. We also take vitamin B12 and vitamin D3 supplements.
